The major focus: Student research. Students can research the various fields involved in biotechnology, or they can research the ethical aspects. Either way, there is a rich universe of information. This is also a great way to illustrate the connections between science and technology because of the demand for new tools to be able to perform much of the new biotechnology research. There are also many definitions that may take half a page (or more) to describe (Xenotransplantation), and students could also be assigned research on some of the major contributors to the field of biotechnology.
